Choc. Chip Puddin’ cake

This has to be one of my all time favorite cakes to eat, and I have been doing so since I was a little kid. It was also the first thing I requested when I got home from delivering my twins, little did I know eating half the cake and breastfeeding twins was not a wise choice. The great thing about this recipe is you mix it right in the pan so there is little clean up involved! I hope you enjoy it for years to come!

 


9x13 Cake Pan
1 Box Devil’s Food Cake Mix

1 Box Devil’s Food Instant Pudding
2 Eggs
1 1/4 Cup Water

1/4 Cup Oil
1 Small Bag Choc. Chips

Cool Whip


Pre Heat oven to 350







    

Hasta Lasagna Don’t Get Any On Ya!

This recipe is probably my most requested recipe I have so I thought it
should be one of the first I post. It has taken me many years to perfect this recipe so it is important to note a couple of things. First the noodles are the most important part or the whole dish wont work. Second, using fresh grated Mozzarella melts and binds much better than pre-shredded cheese. Third, you should have half a jar left over so that you can heat and serve on the side for those that like lots of sauce. Using to much sauce in between the layers makes the lasagna soupy and it wont stick together in layers. Forth, the noodles do expand as they absorb moisture that is why you will notice the extra space around the noodles. and Last, Enjoy this great restaurant style lasagna!

 
1 Box Barilla No Boil Lasagna Noodles(very important it is these noodles or it wont work)

2 Jars Pasta Sauce (you will have half a jar left over to heat and serve on the side)
 
8oz Cottage Cheese

1 Regular brick of Cream Cheese

1 lbs ground beef (or you can do half sausage half beef)

1/2 cup Grated Parm Cheese (we call it shaky cheese)

16 oz Mozzarella Cheese

Italian Seasoning (to taste) 




 

 



There you go a complete meal, Lasagna, salad, and bread and to finish your night and this great dinner serve up some Choc Chip Puddin’ cake with a big scoop of Cool Whip! (recipe is posted separate)

Old Skool Ben.Jo(Peanut) Butter Cookies

I know this isn’t a meal that I am posting for my first recipe, but I wanted to post it any way. This truly is a recipe of my own that I named after my one and a half year old twins. I always refer to them as The Peanuts or simply The Nuts! They absolutely love them and I hope that you do as well! Enjoy! 

Here is what you will need to get started:
Pre Heat oven to 375 F
1 1/2 Cups Peanut Butter
1/2 Cup Butter Flavored Crisco

1/2 Cup Butter

1 Cup Sugar

1 1/2 Cups Brown Sugar (packed)

1/3 Cup Milk
2 Tbs Vanilla
2 Lg Eggs

3 1/2 cups Flour
1 1/2 tsp Baking Soda

1 tsp Salt 

                 
STEP 1 - Combine  together Peanut Butter, Crisco, Butter, Sugar, Brown Sugar, milk, and vanilla. Beat at medium speed with mixer till well blended.

STEP 2 - Add eggs and beat just until blended.  STEP 3 -  In separate bowl combine, flour, baking soda, and salt.  STEP 4 - Combine at low speed dry mixture to creamed mixture until blended. STEP 5 -  Drop rounded spoonfuls onto greased cookie sheet about 2” apart. Flatten each with a crisscross pattern with the tines of a fork. Bake for 10 minutes, let cool on sheet about 2 minutes, and then remove to cooling rack. FINAL STEP - Eat em up with a glass of milk!
              

A Girl. A Camera. An Appetite

I am running with an idea that my friend Jasmine started on her Facebook page where she cooks a meal and photographs it while she is doing so and then posts the pictures with how to’s. I think this is a wonderful idea and so I am taking the challenge to cook a full meal and document it at the same time. I am sure this will come in handy for my friends who always ask me for my recipes but I rarely give out, this blog is now my outlet for my creative culinary skills in the kitchen.  The twist…not only am I cooking for myself but now I am cooking for my twins who so far will eat anything. I promise this… I will cooking at least one complete meal including dessert at least once a week, and I will post pictures with how to’s. So keep tuned for food that taste oh so good!
